How to make shoestring potato fries in an air fryer
- Preheat air fryer to 400F
- Add prepared fries (see below) to fryer basket and cook for 11 minutes in total
- Shake fries after three minutes, six minutes and nine minutes
This recipe is based of using the COSORI Air Fryer (5.8QT model, affiliate link).
The trick to making these ultra thin and crispy shoestring fries are constantly shaking and shifting the fries in the basket as they cook. Thin as they are, they love to stick to the fryer basket. Shaking often, even moving around with a fork – helps them to keep cooking rather than sticking
Preparation notes
First of all you will need to peel and shred a potato. In the above picture, you will see the results of one average potato. I didn’t have a suitable tool to grate the correct potato size, so I did these by hand. A lot of care and a sharp knife.
After you’ve cut the potato you will need to soak them in a bowl of cool water for an hour. This will help release all the starch from the potatoes which helps make them extra crisp.
After an hour drain the matchstick potatoes and then pat dry as best as possible. From there I coat with a little salt, and a tablespoon of oil per potato. I then shake them around in a sealed container, to ensure an even coating. I use Rubbermaid plastic food prep containers for this part, they’re really handy in a lot of different air fryer recipes.
