- Preheat air fryer to 400F
- Spray egg rolls with fat free cooking spray
- Cook for eight minutes, turning egg rolls once half way through

This fun snack can be made in literally fifteen minutes, and is perfect for parties or lazy Sunday’s in front of the TV watching the game.
Southwestern egg roll cooking notes
To begin you will need to make a filling for your egg rolls. This takes no more than five minutes and you can customize as you like. I always start with an equal mix of rinsed and drained sweet corn and black beans. From there I usually always add a little pico de gallo and after that a spritz of lime juice, cumin, coriander and smoked paprika.
These are vegan friendly as standard but you can also sprinkle a little cheese at this stage too if you like. From there, you can build your egg rolls as follows:
Some people like to tamp down and seal with egg wash, I simply dab my finger with a little water and seal around the final edge of the egg roll before completing the last wrap. That works well enough to seal the package up for me.
