How to make Mexican style grilled chicken in an air fryer
- Preheat air fryer
- Cook at 400F for 20 minutes
- Flip chicken every 4 minutes keeping an eye on done-ness
- Let chicken rest for 5 minutes before serving
This recipe is based of using the COSORI Air Fryer (5.8QT model, affiliate link).
The key to this recipe is hot and fast cooking. This ensures the chicken remains juicy, while the marinated exterior quickly develops an enjoyable charred crust in parts.
Sometimes I like to take the cooked chicken, break it down into smaller chunks and cook for 2-3 minutes more. This can be handy if you aren’t quite happy with the doneness of the chicken:

I find it takes 15-20 minutes to cook marinated chicken breasts in my air fryer; the precise times obviously vary based on the thickness of the meat and length of marination time. Always be sure your food is cooked through and at temperature before eating!
Remember, when you remove your chicken to rest, if you plate and cover with some foil it will continue to cook a little more.
How to make marinade
To make the above air fried grilled style chicken you will first need to marinate your chicken. The ideal time is 6 hours in the refrigerator.
To make the marinade mix the following ingredients in a large bowl:
- 6 tbsp plain greek yogurt
- Juice of two limes
- 4 cloves grated garlic
- 1 tablespoon olive oil
- 1 tablespoon oregano
- 1 tablespoon ground guajillo powder (or chilli powder)
- 1 tsp cayenne
- 1 tsp tajinn seasoning
- 1 tsp cumin
- 1 tsp smoked paprika
Once you’ve mixed all these items together into a deep red hued and thick sauce, transfer to a gallon freezer bag. Add chicken breasts to back. This seasoning is enough for 2-4 breasts. You can then work the marinade all over the chicken by massaging the bag – with little mess.
When ready to cook, I add the marinated chicken directly to the air fryer, I don’t bother to remove too much marinade if any.
