How to make potato croquettes in an air fryer

  1. Preheat air fryer to 400F
  2. Cook for eight minutes at 400F, shake half way through cooking

Cooking notes

First of all you’ll need to make some mashed potatoes. I find two small/medium sized potatoes make about four croquettes. It’s important to make a drier mash than you might ordinarily make. For making croquettes I add only about a tablespoon of butter per two potatoes to the final mix (plus salt and pepper). If you make the mash mix too runny you won’t be able to form cohesive croquettes without resorting to adding flour.

With your mashed potato made (I usually work straight with the mash while it’s hot, before it cools and dries out) form your croquettes carefully by hand, tightly packing them. Having kitchen gloves on hand makes this otherwise messy process quick and easy by the way.

Beat one egg in a bowl and dip each croquette in the egg before rolling in panko breadcrumbs evenly. Repeat the process for each croquette and then finally blitz them with some non fat cooking spray. From there, follow the air frying instructions above for delicious potato croquettes.
