First up I like to use a fat free cooking spray like Pam to coat the sausages. This is to ensure they don’t stick to the fryer and ensures that the great casing crisps up nicely. Moreover these sausages are so fatty, I don’t like adding too much more, hence using the fat free spray.

That fat content is also the second note – be careful with these. As the sausages cook they release a LOT of oil. I like to shake and inspect the sausages several times during cooking. Mainly this is to ensure too much grease isn’t building up; at best that might result in acrid smoke as it burns, at worst, perhaps a small grease fire. Just be careful and work with the guidelines of your own fryer.

In the above shot I never once poked or prodded the sausage, just gently shook and rolled it – and still as you can see – it exudes a lot of grease. All that said, I really enjoyed cooking the product using the air fryer. There was less splatter mess as compared with pan frying, and the finish was crisp and enjoyable.
