How to roast an eggplant in an air fryer

  1. Wipe down eggplant with dry cloth
  2. Preheat air fryer to 400F
  3. Add eggplant to air fryer whole
  4. Cook for 20 minutes, turning every four minutes

We used the COSORI to air fry this (affiliate link, we get a fee), always check your food with a good kitchen thermometer.

Virtually every recipe I’ve ever read for roasting eggplant talks about roasting over an open flame. Even if I did have a gas range at home, I’m. not sure how comfortable I’d be holding a smoking egg plant over an open flame, spitting juice everywhere.

Next best thing? Use the air fryer! O.k. you might not get quite the smokey finish of the licking flames, but hey you can always cheat and add back liquor smoke, smoked paprika etc 😉

This recipe yields eggplant (aubergine for my British friends!) thats fork tender. You can mash the interior flesh with the back of the fork with minimum effort. I use air fried roast eggplant to make baba ghanoush:

    1. Oh wow! It might help to pierce the eggplant, much like piercing a potato before microwaving. The water content can heat up in there, turning to steam and theoretically then causing that effect. A few poke holes helps 🙂

  1. I think the eggplant is beautiful but have tried it several times without liking it. I have discovered egg plant and was given a recipe to try. I liked it. I am on a low carb diet and found this recipe in Pinterest and tried it. It tasted wonderful. I used a mixture of chia powder, Italian spices, salt, pepper, onion powder and chopped green onion. The recipe calls for oil but I forgot it. I air dryer cooked it and it was really good. Things are looking up in this egg plant department.
