- Wipe down eggplant with dry cloth
- Preheat air fryer to 400F
- Add eggplant to air fryer whole
- Cook for 20 minutes, turning every four minutes

Virtually every recipe I’ve ever read for roasting eggplant talks about roasting over an open flame. Even if I did have a gas range at home, I’m. not sure how comfortable I’d be holding a smoking egg plant over an open flame, spitting juice everywhere.
Next best thing? Use the air fryer! O.k. you might not get quite the smokey finish of the licking flames, but hey you can always cheat and add back liquor smoke, smoked paprika etc 😉
